Question by : What are some easy veg recipes?
I need easy meatless recipes that are healthy (with few proccessed foods in them).
(i need 5 more) and i already have: pizza, stir fy,pasta, lentil soup, and chili.

Try taking veggies like:
Zucchini
Mushrooms
Spinach
Tomatoes
Garlic
Onions
And a lol bit of olive oil and sautee them. Sooooooo yummy :) oh and eggplant is a great meat substitute

Ratatouille
chop up some onion, eggplant, bell peppers, zucchini and saute in olive oil, salt, pepper, chopped garlic and thyme. Add some canned or fresh chopped tomatoes with parsley. Enjoy. Make a lot. Freezes well.
Take some green vegetables, cut into any shape you like, just blanched ( less then one minute boiling, put into hot water and immediate take out)
Mixed with salt paper lime juice,( tomato, onion green chili can added)
If you like herbs can add will give you better aroma,

ASIAN STYLE SNOW PEAS
1 lb. snow peas, trimmed.
2 teaspoons sesame seeds, toasted
1 red bell pepper, julienned
1 yellow pepper, julienned
2 scallions, thinly sliced
2 tablespoons soy sauce
3 tablespoons sesame oil
Pepper to taste
Boil the snow peas in salted water for 15 seconds and then immediately submerge them in ice water. Toast the sesame seeds in a skillet over medium heat just for a minute or so until they brown and give off a nutty essence. Mix the peas, peppers, scallions, sesame seeds and soy sauce in a large bowl. Sauté the vegetable mixture in the sesame oil for 2-3 minutes or until the peppers are soft. Season with pepper and additional soy sauce if need be.

Pizza is really fatty. Unless you’ve got a dry crust, thin, with olive oil and little cheese only mozzarella , then it’s basically not healthy/ Once a month OK, but for health? No.
Fava bean and chickpea salad with green peas, corn, diced onion, vegan sour cream, cilantro, garlic and lemon- a lovely warm salad that you can make with a few cans and a single minute of chopping.
No cooking, no prep- just drain cans and empty some frozen green peas to thaw- easy and heated through , is amazing.
(leave the vegan sour cream til the beans are warmed)
SPicey noodle soup- heat veg broth , 2 cloves crushed garlic, some soysauce, and brown sugar in a pan, with celery stick, carrot and half onion.
Simmer to make a broth. then add ginger and coconut milk ( half a can). Add tofu cubes , broccoli floerets ( small) , ban sprouts, and some lemon grass. Simmer the tofu a minute, then boil some rice noodles a few minutes. Drain them, rinse and add int a bowl- and pour the spicey hot soup on top. This is hot and sour but not chili-hot.
A beautiful soup. DOn’t skimp on the garlic or lemon grass or ginger- equal amounts.
Stuffed mushrooms- take 2 portobellos- big ones.
Fry shallow in a pan with a tiny bit of oil and soysauce and a half cup of broth.
Add cloves of garlic and saute the mushrooms, till cooked lightly. Add more soysauce and a drop more oil if the pan gets dry. To the pan add sliced green tomatoes, and chopped green onions. COntinue cooking the whole lot, then flip the mushrooms and turn the open hole side upwards.
Fill them with the green tomato slices, soycheese, onions and walnuts.
YOu can finish them off by baking it to get melted cheese, but actually I don’t use cheese, I just leave it with green tomatoes ( so good- get tomatillos), nuts and onions.
Spray with soysauce for a condiment- this is my recipe and I love it. So I hope it’s as easy for you- it’s basically just putting all these things in a pan and cooking them up, adding a few drops of oil and soysauce when it gets dry.
Hummus is a delicious Middle Eastern chickpea spread and it’s vegan. It has three main ingredients: chickpeas, lemon juice and garlic (it typically calls for tahini {sesame paste} – which is an excellent source of calcium by the way-but, this is easily interchangeable or left out as with the other ingredients). If you like you can add other ingredients or replace the chickpeas with things like edamame, avocado, green peas, bell peppers, etc. and you can add tofu or yogurt (soy, coconut) for richness or replace the lemon juice with apple cider vinegar. You need a blender or food processor or potato masher. Makes a large amount (but you can halve the ingredients).
Hummus:
Chickpeas cooked or canned 800g
3 – 5 garlic cloves or 1 – 2 (or more) T minced garlic
1/2 lemon
Water (optional for smoother/lighter consistency)
To taste: Parsley, salt, olive oil, smoked paprika and cumin to taste (optional)
Squeeze lemon juice into bowl and remove seeds. Blend/process/Mix minced garlic or garlic cloves with lemon juice. Drain can of chickpeas and put in blender/food processor/bowl. Blend/process/mix all ingredients until smooth (consistency is to taste/you may add water for smoother consistency). That’s it!
Now, you can make sandwiches with other sliced vegetables (I like sliced tomatoes, onions, olives and bell peppers). Or hummus makes a great dip for pita bread, veggies, bread sticks, pretzels, etc. It also is good by itself!
If you fancy more recipes for soup there are loads available and lots that are slightly more unusual. My favourite soups are nettle soup and watercress soup… so yummy!
